Vietnam is one of the world’s great coffee-producing countries, and it is the world’s largest producer of Robusta Coffee. But there is another side to Vietnamese coffee that far fewer people in the UK have had the opportunity to experience. Speciality Arabica coffee, grown high in the mountains of Da Lat.
Zanya Coffee Farm, ran by Marian and Lim, is at the forefront of changing perceptions about what Vietnamese Coffee can be as they are one of the first farms in the country to produce speciality Arabica.
What is Double Washed processing?
Double Washed is a coffee processing method designed to produce a particularly clean and refined cup.
After harvesting, the outer skin and pulp of the coffee cherries are removed. The beans undergo fermentation and washing stages to remove the remaining mucilage before being carefully dried.
Compared with other processing methods, Double Washed coffees often have greater clarity, a lighter body and a more pronounced acidity, allowing the natural characteristics of the coffee to shine through.
The result is typically a bright, delicate coffee with a clean finish.
